Beautiful Blueberry Buckle

One of Dan's favorite treats is a family recipe that his mom and dad have passed on to us and because it just happens to be blueberry season, we just had to make it! Like just had to!?! I have to admit, I had never had the privilege of eating blueberry buckle before,  but I'm a fan, like a really big fan! It's a pretty simple recipe and I'm not sure why I've never had it before now. This past Saturday we headed out to a local blueberry farm for more blueberries and I'm sure we'll be making it again - like maybe tomorrow, and the next day, and the next...

  • 1/4 cup butter
  • 1/2 cup sugar
  • 1 tsp. vanilla
  • 1 egg
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/3 cup milk

  • 1/2 cup sugar
  • 1/2 tsp. cinnamon
  • 1/3 cup flour
  • 1/4 cup butter

1. Cream butter and sugar; add egg and vanilla, alternate adding flour and milk until mixed together.

2. Spread the batter into a greased loaf pan.

3. Spread 2 cups blueberries over the batter.

4. Mix the topping ingredients together and spread the topping over the blueberries

5. Bake 45 minutes to an hour at 350.

6. Pull it out, let it cool, and enjoy with some yummy ice-cream or whip cream on top - then hide the leftovers or you will eat it ALL!!
